Today it began, and not as hard as I thought. No Gluten, Eggs, Sugar, Soy, Peanuts, Corn or Dairy...
Dinner tonight: pan seared chicken (marinaded with ginger, garlic, cumin, sea salt plus 1/2 lemon juiced/zested and 2 T of olive oil), asparagus roasted with sea salt, garlic and a dash of olive oil and a side of quinoa.
The last time I made quinoa the flavor was good but the texture was too mushy so tonight I tried something different...
Sun Dried Tomato and Mushroom Quinoa:
Small dice 3 mushrooms and 1/2 onion, saute med. with 2 T. olive oil for about 5-8 minutes. Add 3/4 C. quinoa and 2 minced garlic cloves, stirring to coat in oil for 1-2 minutes. Add 3/4 C. chicken broth, stir and let cook off until almost dry. Add 1/2 C. chicken broth, cooking until almost dry, stirring as needed, repeat adding 1/2 C. chicken broth, until quinoa just begins to soften but does not open up fully (taste al dente). Total time and liquid will vary ( I used approximately 2 - 2 1/2 C. of chicken broth for 15-18 min).
Remove from heat, mince 1/3 C. sun dried tomatoes packed in olive oil (or qty. to your liking), add to the quinoa and serve.
Delicious 4 servings
