Virgin Diet Day 5, the hardest part is waiting 4 hours between breakfast and lunch then again to dinner. I guess I have always been a snacker and some of that is based on avoidance. Avoidance of cleaning or whatever the next task is on my list. The good news is I am able to eliminate the 7 foods (as long as I have my chocolate:)
Quick Salad:
Peel and quarter 1 english cucumber cut into chunks, fine dice 2/3 c. red onion, drain and add 1/2 can of chickpeas. Season with sea salt, cumin, granulated garlic and lemon juice (if using a fresh lemon add the zest as well). Add 1/3 c. chopped fresh cilantro (or to you taste) and 1 diced avocado. Add 2-3 T of olive oil and gently mix to coat.
Serves 3 to 4
