Spinach Mushroom Onion & Tomato, side dish
Simple side dish, so delicious I could eat it every other day!
Heat 1 tablespoon of olive oil in a saute pan medium high. Add 8 diced mushrooms and 1/2 lrg onion diced, let sit, don't stir until mushrooms brown (approx. 2 min.). Then saute/stir for 1 to 2 minutes adding granulated garlic . Add approximately 3 handfuls of baby spinach and 2/3 cups cherry tomatoes sliced in half, sea salt and pepper to taste. Reduce heat to low, stir until spinach wilts and tomatoes soften. Serve, or add precooked cubed chicken or salmon to create a main dish.
